Yield: 8 glasses

ingredients

½ cup sugar

1 cup water

1 ¼ cups fresh lemon juice (about 6 large lemons)

2 cups raspberries, pureed (fresh or frozen)

3 ½ cups cold water

ice cubes

DIRECTIONS

In a small saucepan, bring the sugar and 1 cup of water to a simmer. Stir so that sugar dissolves completely then remove from the heat and let cool to room temperature.

Place the raspberries in a food processor and process until smooth.

If you don’t want the seeds to be present in your lemonade, you can strain the syrup through a fine strainer, pressing on the seeds to get as much syrup through as possible. This part takes a few minutes. Discard leftover seeds.

Pour pureed raspberries in the sugar water and stir well. Add the lemon juice.

Combine the raspberry mixture and the cold water in a large pitcher. Stir well and add lots of ice.

Serve raspberry lemonade with thin slices of lemons and raspberries.

Red Raspberry Lemonade

One of Maine’s favorite summer berries is the red raspberry. What Mainer’s love about this lemonade is that it’s so inviting that you just want to grab a juice glass, chill out on your back porch and soak up the beautiful Maine summer.
