ingredients

2 tablespoons butter

3 tablespoons sugar

2 teaspoons kosher salt

2 teaspoons dry mustard

2 tablespoons flour

Dash cayenne pepper

2 eggs slightly beaten

1 ½ cups milk

½ cup apple cider vinegar

DIRECTIONS

In a saucepan, melt the butter first. Now mix sugar, salt, dry mustard, flour & pepper in the melted butter. Whisk in eggs. Gradually stir in milk and vinegar.

Heat over medium heat, stirring mixture constantly until it becomes quite thick, about 2 minutes. Take off heat & cool in refrigerator. Makes 1 pint of dressing.

This recipe is an accompaniment for Old-Fashioned Homemade Cooked Potato Salad. Many Maine grandmothers grew up with this recipe, which was always used for salad dressing instead of mayonnaise. For over 100 years this recipe was used in pasta salads, egg and tuna salads and sandwiches. This old fashioned, creamy, boiled dressing has a unique, tangy flavor that is excellent on coleslaw, potato salads and vegetable salads.
