ABOUT THIS RECIPE

Yield: 8 servings each

WET ingredients

4 eggs

1 1/2 cup olive oil

2/3 cup of cold water

1 can of pumpkin mash

 

DRY ingredients

3 1/3 cups of flour (sifted)

2 teaspoon of baking soda

1 teaspoon of salt

2 teaspoon of cinnamon

2 teaspoon of nutmeg

3 cups of sugar

DIRECTIONS

Preheat oven to 375 degrees

Combine dry items & wet items separately

Now mix both mixtures together, by placing the wet ingredients on top of the dry ingredients in a food processor. Pour each half of the mixture in a bread pan that has been sprayed with cooking spray. Pop in the oven for 1 hour. Check for doneness with a toothpick. If done, the toothpick will come out clean. Once the breads come out of the oven, wait 3 minutes, and dump the breads out of the hot pans. Tap bottom of pans if the breads won’t fall out. Quickly wrap in tin foil tightly, to keep the steam from the breads from escaping. This makes for very moist bread. Let cool over night.

Grammy Dorothy's Pumpkin Bread

This is a great old Maine recipe, moist and spicy. The bread actually tastes even better the day after it is baked. This recipe has been passed down through generations of DownEast Maine families. It is traditionally a Fall bread, and quite popular at Thanksgiving. The recipe makes two loaves, so you can serve one as a homemade treat for the family and wrap up the other as a seasonal hostess gift. Done and done!
