ingredients

1 lb of lump crabmeat (which is 3 5oz.containers)

1 ½ cups of Panko

1/2 red pepper, minced

2 scallions, sliced

2 tablespoons of non-fat Miracle Whip

2 large eggs beaten

10 dashes hot sauce

1/4 teaspoon of salt

1/4 teaspoon of freshly ground pepper

2 teaspoons OLD BAY Seasoning

Lemon Aioli Sauce - see below

DIRECTIONS

Preheat oven to 450°F

Coat a 12-cup nonstick muffin pan with cooking spray.

Mix  panko, bell pepper, scallions, miracle whip, egg whites, hot sauce, salt & pepper and Old Bay Seasoning in a large bowl until well combined. Now gently fold in the lump crab, avoid breaking the large lumps of crab if possible. Divide mixture evenly among muffin cups.

Bake until crispy and cooked through, 20 to 25 minutes.

 

LEMON AIOLI SAUCE ingredients

1/2 cup extra virgin olive oil

1 egg

1/4 tsp minced garlic

1/4 tsp salt

1 tsp dijon mustard

1 tbs fresh-squeezed lemon juice

DIRECTIONS

Add all ingredients to a blender and churn until emulsified

Tip: Make ahead of time and refrigerate the day before or the morning before serving to thicken

Keep refrigerated! Discard any unused sauce after 2-3 days
